Melt Away Holiday Pounds the Mediterranean Way at “The Valley Bistro”

Did you eat too many holiday cookies?  Drink too much eggnog?  Most Americans pack on a few extra pounds over the holiday season but eating Mediterranean style can help melt away the fat.  “The Mediterranean diet is putting things that are fresh from the ground into your body. Nothing is processed. Nothing is frozen. Everything we serve here is fresh and made from scratch.  We have fresh seafood, salads with goat cheese, pizzas with a cauliflower crust.”, said Jacqueline Ferentinos.

Fresh, clean and natural are on the menu at The Valley Bistro on Valley Road in Enola, Pennsylvania.  Ferentinos opened the restaurant last September.  It’s a modern place that serves dishes with a Greek flair. Ferentinos is focused on serving healthy meals that are full of flavor but not full of fat.  She likes to come up with cuisine that’s a water mouthing mix of fresh ingredients served in a friendly environment.  “Our motto is creative, fresh and delicious. Full of flavor and full of love, you can get a great meal here that does not have a lot of calories”, said Ferentinos.

Seeded Goat Cheese Salad, Garden Harvest Flatbread with a Cauliflower Crust or a Greek Salad topped with a Shrimp Cake are some of the healthy items on the menu.  Open for breakfast and lunch, The Valley Bistro also serves vegan and gluten-free options while still offering plenty of dishes for those who want to indulge.

A stay at home mom for many years, Ferentinos grew up in the restaurant business and is a “foodie” at heart.  She feels food is the spice of life and believes, “If it’s good, they will come.”  “So many good things happen around food. Whether it’s a birthday or a celebration, good food is good for the soul and it brings people together.  I want everyone to feel welcome here and go home happy”, said Ferentinos.
